okra(bhindi) with onions


Okra with Onions
Ingredients:

• 1 lb Okra, washed
3 tbsp Vegetable oil
1 Onion, medium, chopped
1 tsp Garlic, minced
1 tsp Ginger, minced
1/4 tsp Turmeric powder
2 Green chillies, chopped
1 tbsp Vinegar
Salt to taste
Clean the okra. Cut off the tops and discard. Chop into 1" pieces
Heat the oil in a pan; saute the onion for 2 minutes till transparent. Add the garlic and ginger; saute for 30 seconds
Add the okra, turmeric powder, green chilies, vinegar, and salt; mix well. Cook covered on low heat till the okra is tender
Cook uncovered to dry up any liquid. Adjust seasoning
