Mexican Vegetable and Bean Curry
Ingredients:

• Cauliflower florets 9-10
• French beans 5-6 (chopped medium size)
• Carrot 1 (cut into cubes)
• Green peas 1 cup
• Onions 2 (finely sliced)
• Green chillies 2-3(finely chopped)
• Red kidney beans(cooked) 1 cup
• Dry red chillies 2-3 no(s)
• Vinegar 2 table spn
• Tomato sauce 4-5 table spoon
• Green chilli sauce 2 table spn
• Water 2 cups
• Oil 3 table spn
• Salt to taste
Boil all the vegetables (except onion), heat oil stir fry onions.
Make a paste of red chillies and add it to the onion along with green chillies and stir fry.
Add cooked vegetables and red kidney beans along with some water cook on a low flame; add tomato sauce, chilli sauce, vinegar and salt to taste simmer on low flame until the mixture thickens a bit. Garnish with chopped coriander leaves serve hot with Mexican rice.
