Boil
all the vegetables (except onion), heat oil stir fry onions.
Make a paste of red chillies and add it to the onion along
with green chillies and stir fry.
Add cooked vegetables and red kidney beans along with some
water cook on a low flame; add tomato sauce, chilli sauce,
vinegar and salt to taste simmer on low flame until the mixture
thickens a bit. Garnish with chopped coriander leaves serve
hot with Mexican rice.
